Miranda Kerr’s favorite miso powder:Is it the ultimate seasoning?!

The fact it’s a powder makes it so versatile

Organic Miso Powder came about through a collaboration with supermodel Miranda Kerr, who is particular about what she eats even with her active job on the world stage. In this edition, we ask food stylist Okamoto Yukako-san to share some simple but stylish recipes using this new-style powdered miso.

“When using miso in miso shiru (soup), stir-fries and other dishes, we usually dissolve it in in water first. But with miso powder, you can sprinkle it on salads, and add just a little to all kinds of dishes, making miso more versatile,” says Okamoto-san. The following two recipes showcase the benefits of a powder you can sprinkle.

Use it like you would parmesan cheese!

Miso-Cheese Toast with Zucchini Florets combines fermented foods miso and cheese, and the flavor is a match made in heaven, too.

“Sprinkling miso powder on top makes your everyday toasted cheese sandwich much more sophisticated. Topping it with ribbons of zucchini is both cute and healthy. Using Camembert cheese is another way to dress it up.”

Sautéed Miso Potato Batons, where miso powder is mixed with butter, is another simple, deeply flavored dish.

“It is seasoned only with butter and miso powder. Because it’s powder, the finish is not sticky. If you are worried about how to use miso powder, I recommend just using it like parmesan cheese. Sprinkling it on pasta or a gratin would add a delicious flavor accent.”

Miso powder makes using miso easy and gives you so many options. Why not add it to your everyday cooking.

Miso powder recipes you’ll want to show off!

<Miso-Cheese Toast with Zucchini Florets>

[Ingredients (Makes 2 serves)]

1/2 a zucchini
60 g melting cheese
1/2–2 tsp Organic Miso Powder Vegetable Stock
2 slices of bread
Olive oil to garnish

[Method]

【1】Using a peeler, peel the zucchini into long ribbons. Roll into florets. (If the ribbons are wide, halving them widthwise will make them easier to roll)

【2】Divide the cheese between the two slices of bread, top with the zucchini florets.

【3】Toast.

【4】Sprinkle with Organic Miso Powder and drizzle with olive oil.

<Sautéed Miso Potato Batons>

[Ingredients (Makes 2 serves)]

2 medium potatoes (we used one regular and one purple potato)
Vegetable oil to shallow-fry
10 g butter
1/2 tbsp Organic Miso Powder Bonito & Kelp Stock

[Method]

【1】Peel the potatoes and slice into 1 cm-wide batons. Soak in water. Drain well and line up on a heat-proof dish. Cover with cling film and microwave for 3 minutes.

【2】In a frying pan, heat enough vegetable oil to fry the potatoes. Fry the potato batons over a medium heat, turning regularly until golden.

【3】Remove the frying pan from the heat. Add the butter and Organic Miso Powder and stir to combine.

【4】Transfer to a serving dish and sprinkle with more Organic Miso Powder, if desired.
